Juicing Day 2

Adam and I have been talking about going on a juice diet for awhile now. We knew it would be difficult to do during the school year and figured summer vacation would be the perfect time to give this a try. I've decided to blog each day about the process and our experiences.
My goal is to juice until Friday evening and then juice for breakfast and lunch and eat a regular meal for dinner. Adam's goal is to juice until Friday and then decide if he wants to continue.

*Day 2*

Our second day of juicing wasn't too bad. Adam woke up feeling much better than he did last night and I felt fine today. We've both noticed that our energy level is down a bit and our brains are feeling kinda fuzzy but overall it's been easier than what we were preparing ourselves for.

I've noticed that my skin feels softer and my lips don't feel as chapped. Adam and I both weighed ourselves this morning and after 1 day of juicing he is down 4.8lbs and I am down 3.2lbs. I'm interested to see how this will fluctuate throughout the week now that we're drinking more water.

Today's juice menu included two fruit smoothies made with a store bought natural juice called Mega Green. Our "main" juice drink this evening included (LOTS of) spinach, carrots, half a lemon, one cucumber and one red apple. It wasn't as citrus-y as last night's concoction and tasted pretty mild. Adam and I both enjoyed it and he was able to drink two cups tonight.

I needed a change from cold and sweet drinks and have been craving hot soup all day. On our way home tonight I caved and  stopped by the store for some organic all-natural soups. I bought a few boxes of butternut squash, tomato and spicy black bean soup. Tonight I made the spicy black bean and while it does stray from the "only fruits and veggies plan" it's still in liquid form and beans are HEALTHY! It was so nice to taste something that was warm and NOT sweet.

I have some HUGE grapefruits from Costco and have been looking forward to making a large glass of grapefruit juice for breakfast tomorrow morning.
Thanks for checking in....we're still alive and kickin' :-)

Juicing....Day 1

Adam and I have been talking about going on a juice diet for awhile now. We knew it would be difficult to do during the school year and figured summer vacation would be the perfect time to give this a try. I've decided to blog each day about the process and our experiences.
My goal is to juice until Friday evening and then juice for breakfast and lunch and eat a regular meal for dinner. Adam's goal is to juice until Friday and then decide if he wants to continue.

*Day 1*

I went to Costco this morning and loaded up on fruits and veggies. $175 later the fridge was full of oranges, grapefruit, spinach, apples, lemons, frozen fruit and lots of carrots. Adam and I both weighed ourselves so we'd have a starting weight. While I'm not going to post our weights I will let our readers know how much our weight changes each day.

Throughout the day we sipped on some pure carrot juice, a fruit smoothie made with pineapple coconut juice and munched on a few homemade frozen juice bars. Our main "dinner" juice included a mixture of carrots, lemons, apples and a cucumber. I thought it tasted pretty good with all the lemon in it but I think Adam had a tough time getting it down. Later that night I made up a banana smoothie so we could have something for "dessert".

The research says that the first 3 days of juicing are the most difficult since the body is trying to adjust to the lack of solid food as well as expel toxins. Today wasn't too bad but I did notice that I had a difficult time focusing and concentrating (once again...so glad we're not doing this while we are working!). I also had a hard time getting to sleep and my legs were very restless.

Adam was fine throughout the day but started feeling dizzy in the evening. I woke up to him throwing up in the middle of the night so hopefully he is experiencing the worst of it right at the beginning.

The hardest part for me today was remembering that I couldn't eat anything. I'm starting to realize how frequently I go to the fridge just because I'm bored. I found that it helped to do little chores around the house when I felt like munching on something. Maybe by Friday I'll have a super clean house!

another week of summer lovin'

Ahhh, we are loving summer despite the cold and raining weather we've been having in Juneau. We've managed to fill our week with a mix of chores, adventures and relaxation.

This week Adam has been volunteering at the Shepard of the Valley Church's lunch program for kids. From 11-1 the church is open for outdoor activities, lunch and crafts. Adam has been coordinating the outdoor activities and LOVING every minute of it. I joined him on Wednesday and had a great time too!

On Monday I had breakfast with the girls at the Sandpiper. It was Amy's last day in Juneau before she hits Europe for a couple of weeks.

I wrapped up the week with an early Saturday morning run with Stephenie. It was WET-WET-WET but we didn't let it stop us. We had a great time and it was the perfect way to start the weekend!

Tenakee Love & Katrina's 40th birthday

I recently returned from a much needed 5 day vacation in Tenakee. It's a wonderful little town where cell phones, internet and even cars cease to exist. Right after school let out for summer vacation Stephenie and I packed our backpacks and headed for the ferry.
After a 7 hour ferry ride (also known as the poor man's cruise!) we arrived in Tenakee. A whale greeted us while the ferry was docking and the sun peeked out just a little.
The sun came out in full splendor the following day and we took advantage of it by hiking out and finding an amazing beach where we had a picnic lunch, sun bathed and listened to the whales in the channel.

The following day our friend, Katrina, flew out to join us on our adventure. She had never been to Tenakee before so we flew her out as part of her birthday present.

Sunshine, whales and morning coffee on the' deck was the perfect way to celebrate a birthday. We soaked up the sun and were absolutely lazy all day. That evening we joined up with Wally and Cindy at the Palapa Bar and were treated to an amazing dinner of fresh halibut and crab.

This was the perfect way to start our summer break and I could not have asked for a better trip!

Summer Break!

We celebrated our official last day of school with a BBQ at Sandy Beach. It was gorgeous the entire day but decided to start raining during our BBQ. We still had a great time and enjoyed good burgers and wonderful company.
Adam and I plan on sticking close to home this summer. We have a lot of house projects we'd like to get done but we would also like to get out and kayak, hike, fish and just enjoy a summer in Juneau. Hopefully we'll see some decent weather.
I've neglected my blog for the last couple of months so I'm hoping to be a better blogger now that I have some free time! Happy Summer!!!

Lots of catching up to do....

It's been awhile since I've posted anything on my blog. We've been doing well but have been busy with the end of the school year.

It was a hugely successful year with the kids. I love the relationships we've developed with families, students and staff members. Next year brings on new changes and unknown territory but for now we will savor the memories of the school year and enjoy our summer before gearing up for a new school year.

Haines weekend trip!

Over Memorial Day weekend I headed up to Haines for their 20th annual Brewfest. I went with a group of friends from work and we had a relaxing and fun weekend. We enjoyed good food, great company and lots of outside adventures.

Saturday was a little rainy but no one let it spoil their good time. A lot of people took their bikes on the ferry and rode into Haines. We had a car so we didn't have to do that but we still donned the rain gear for the trek down to the fairgrounds.

We intended to camp in a friend's back yard but the rain brought us inside for a living room slumber party.

The sun came out on Sunday so after a delicious breakfast we headed back to the fairgrounds to try out the disc golf course.

It was my first time disc golfing and I wasn't very good but I had fun. :-)

It was a lot of fun being able to escape Juneau for the weekend and ferry over to Haines. It was just what I needed to make it through the last week of school!
